Before switching to Catering POS (or any till), write a rehearsable rollback sheet: visible stop triggers with decision deadlines, one reachable role plus a deputy, how long old systems/credentials/devices stay and still boot, and the cut-back order including in-flight tickets—then walk it once with the people who will act. A vendor saying “you can roll back” does not mean your store already can.
- Triggers: visible facts (day-end stuck, required payment path fails, unexplained qty/amount gaps), with how you judge and when a decision is due.
- Decision-maker: one role + deputy; staff report signals, they do not close the call. Do not dismantle the old till or kill old accounts before agreed checks pass.
- Recovery: retention end-date is a date, not “keep for now”; name who exports, who hand-writes, who reconciles after cut-back. Unrehearsed rollback is only a sentence.
Full gate: How to roll back: triggers, decision maker, cut-back steps. Keep the path open during a pilot: Limited pilot. Recording passed/failed/still unknown: Live-day test. We do not carry out rollback for you, and we do not guarantee uninterrupted trading.
